If there is a dessert that takes me back to my childhood, this is it! My sisters go to is cherry, I am more of an almond person. Love making these in mass batches, wrapping them up & giving them to my nearest for Christmas… Not that they ever make it home!

Ingredients
250g almond meal
1 cup caster sugar
2 egg whites
1 tablespoon almond essence
Blanched almonds, glacé cherries or any candies fruit
Method
Place all ingredients into a mixing bowl and mix together with a wooden spoon until completely combined.
Roll into balls about the size of a 20c coin and place onto a tray lined with baking paper.
Press down the biscuit by placing a blanched almond or any candied fruit on top. I did cut my cherries pictured in half.
Bake at 160 degrees until slightly golden and allow to cool on the tray.
