The absolute quickest, easiest and most importantly delicious dessert ever! Thank me later…
This little number is dedicated to my two favourite sweet taste testers – Tahlia & Joel

Ingredients
250g mascarpone cheese
3-6 tablespoons caster sugar
3 tablespoons amaretti liquor
1 teaspoon vanilla paste or extract
1 teaspoon lemon rind
1 – 2 teaspoons lemon juice
Amaretti biscotti or cherries to top
Method
In a large mixing bowl place the mascarpone, 3 tablespoons of the sugar, vanilla, rind, juice and 1 – 2 tablespoons of the amaretti.
Whip until combined with an electric hand mixer.
TASTE! – this recipe is made to your own preference, if you would prefer it sweeter add more sugar, if you would like more almond add more of the amaretti.
Whip together until nice and thick, it wont take long as the mascarpone is already thickened.
Place into small glasses and top with crushed amaretti biscuits and/or a cocktail cherry. They are sweet so you don’t need much in each serve!
