I loveeee asparagus!!! And whats better than adding a vegetable you love to a dish you love even more?! Quick, easy and everything is laced with delicious asparagus.

Ingredients
2 bunches fresh asparagus
1/2 brown onion
300g penne / rigatone pasta
2 tablespoons mascarpone
Parmesan cheese
Olive oil
Salt
Method
In a large pot, bring your pasta water to the boil with the woody ends of the fresh asparagus
Prepare the remaining asparagus by chopping into small portions.
Add to a small pot, cover with water and boil until they start to soften. Remove the tips from the water and blitz the water and asparagus together with a bar mix.
Once the pasta water is boiling, remove the stalks, salt and add in your pasta to cook.
Dice up your onion and cook until soft in a pan with a drizzle of olive oil. Add the asparagus pure and reduce down until it starts to thicken. [if there is too much water in the pot, pour out some before blending together] Season well.
Add the mascarpone and stir well. Add the pasta and parmesan cheese to taste.
