Not your basic potatoes! I like to jazz this up by adding some shredded tuscan kale while frying the potatoes so it goes nice and crispy!

Ingredients
500g washed potatoes
6 rashers of bacon
2 cloves fresh garlic, diced fine
1 – 2 heaped teaspoons minced or fresh chilli
Parsley
Olive oil
Salt
Method
Chop your potatoes into bite sized pieces, place in a pot and completely cover with water.
Season the water and boil until a knife goes in easily. Drain
In a large pan, add enough oil to coat the potatoes and add the garlic and chilli. Fry until it becomes fragrant on a medium heat, don’t burn your garlic!
Add in the bacon, mix well and add in the potatoes.
Fry until the potatoes absorb the oils, become golden and the bacon crisps up – be careful as this may splatter. Add more chilli if you would like it with a bit more heat!
Finish with a good handful of fresh parsley leaves.
