Berry Jam

Inspired by one of my absolute favourite Christmas movies ever, “Klaus”! When the children are told they’ll only receive presents for doing good deeds, they decide to pick and deliver their neighbours berries instead of stealing them, who in turn delivers berry jam to their door that they use for a berry cake!
I have fond memories of my mother spending hours in the kitchen making raspberry jam a child, the house smelling like absolute heaven.

Ingredients
500g berry of choice [or fruit]
500g castor sugar
Squeeze of fresh lemon juice

Method
Remove steams/peel from your fruit
Place your fruit, sugar and lemon juice in a pot over a low heat
Stirring until the sugar has dissolved, scraping down the sides of the pot.
Simmer until the jam becomes a jelly texture
Your jam is ready to go when you place a spoon of the mixture into a saucer with cold water. it should stick together and be able to be rolled into a ball! (about 20-30min simmering)
You can remove the “foam” off the top at this stage for a clearer jam.
Place into a sterilised jars

NOTE: You can change the quantity of jam you make, simply keep the ratio of equal parts fruit and sugar!
