A recipe inspired by our dearest cousin Matthew! We had never been the kids to grow up eating this but have come to love it as adults, missing out all those years!

Ingredients
1 bunch of fresh broccilini
1 red chilli
2 garlic cloves
Extra virgin olive oil
Romano cheese
Salt & pepper
Method
Bring a pot of water to the boil, salt well and add pasta of your choice as well as the broccolini chopped into bite sized pieces, leaves and all.
In a pan, add some oil and fry up the chilli and garlic, sliced and diced to your liking. Be sure to have the heat not up too high as you want the oil to take on the flavour as well as not burning the garlic.
Drain the pasta and broccolini, reserving some of the pasta water. Add to the pan and cook through with some of this water & season to taste.
Coat with plenty of cheese and enjoy.
