Inspired by the movie Arthur Christmas but to be enjoyed much more than grandfather Christmas does! This is my spin on the festive greens that will become a family favourite very quickly!

Ingredients
12 large brussel sprouts
1/2 cup guanciale, cut into short strips
1 heaped tablespoon crushed pistachio nuts
1 tablespoon butter
Water
Method
Start with your guanciale, cut into 1cm strips
Place into a non stick pan with NO OIL! Cook over a medium heat, turning so that they do not burn.
Once they are crispy and tasting like crackle, remove from the pan and set aside. Keep the fat that has rendered out in the pan off the flame for 1-2min to slightly cool [will be very hot!]
Trim off the ends of your sprouts and slice in half
Add the pan back on the heat and fry the brussel sprouts until golden., mixing to ensure all sprouts are covered in the fat
Add the butter and pistachio nuts, mix well
Once the butter has been absorbed add around half a cup of water to the pan to steam the sprouts. Cook until all water has evaporated
Place sprouts in a serving dish and top with the crunchy guanciale
