Caterina’s Crab Spaghetti

A little dedication to the number 1 fan and maker of this treat yourself pasta! For those who like a kick add some freshly sliced chilli at the end with the crab meat.

Ingredients
1 cup crab meat
5-6 medium tomatoes halved
1 garlic clove, minced
1 shallot, sliced
1/2 cup fish stock
1/3 cup reserved pasta water
2 tablespoons salted butter
Fresh parsley
Spaghetti (number 7 is my choice)
Salt & pepper
Olive oil

Method
Bring a pot of water to the boil and add a good spoon of salt. Add the spaghetti and cook, reserving some of the salted water before straining.
In a pan add a few spoons of olive oil and heat.
Add the garlic, onion and tomatoes. Once the onions start to soften add the stock and allow the sauce to reduce. Finish with the butter and a good serving of parsley before adding the crab meat. Allow this to cook for a minute or two and add the spaghetti to the pan and cook for another minute with a dash of pasta water to bring it all together.
