Is there anything better than discovering a new amazing creamy cheese that you never knew existed? I’m on a mission to try a different cheese every month [possibly a lot more knowing me] from local delis and supermarkets to Victorian farms and cheese mongers.

There is nothing more rewarding than eating a delicious ball of mozzarella that your hands have created in hell hot water! Learning how to create this was an experience in itself, not to mention biting into a ball of silky cheese. Yes you can add this to salads, on top of pizzas or in a caprese sandwich but my most enjoyable moment is grabbing it straight out of the water and biting straight into it!

Will Studd Le Dauphin Double Cream

Heaven in a cheese. This super extra creamy cheese consistency is almost like a feta cross brie. Do not let the smell detract you from trying this cheese because the taste is wonderful! Eat on its own on a good biscuit or treat yourself to a special toasty with some soft dried figs.

Pistachio sheep milk provolone
Purchased from Cibo deli, Mount Martha
Hello, number 1 ingredient for the ultimate toasted sandwich. Pair this with a good sour dough bread and a good cheddar and toast in a hot pan with some butter. Add extra crushed pistachio if you have some and yummm the provolone is so super creamy and melts fast.

WOW!!! Firstly, i was unaware when ordering this that it is actually a vegan cheese! HOLD THE PHONES!!! Secondly, this has to be up there with some of my top cheeses ever, yes big call. A Dutch cheese that is aged for 2 years – during which parts crystallise throughout the cheese. Caramel tastes and absolutely moorish and addictive!!! Cut a piece off and enjoy the cheese solo.

That’s Amore Cheese, Caciotta Smoked
I’m honestly not a big fan of smoked cheese but this one I didn’t mind as it wasn’t overpowering. Absolutely perfectly paired with some home made hot salami and some refreshing Sicilian green olives

That’s Amore Cheese, Buffalotto
A firm buffalo milk cheese, similar to a provolone. Sharp picante taste with a much creamier texture. Paired with some home made salami & mortadella this was very hard to stop myself from eating the entire block. Don’t cut but break this apart like you would a parmesan.

Aldi Ash Brie Cheese, Emporium Selection
Okay, I think I have officially discovered my new favourite brie ever. Super creamy consistency with a subtle ash layer running through the middle of this wedge of perfection. Served on some fig and seed crackers with a drizzle of honey (Thank you Tahlia) Don’t be put off by the ash, this aids in the ageing process, neutralises acidity and also aids in reducing excess mould growth on the rind! Plus it gives it a bit of a nutty taste, yummm!

That’s Amore Cheese, Burrata
Shredded mozzarella mixed with heavy cream encased in a ball of mozzarella. Is there a more divine cheese imaginable? Pop it in a small bowl and chop up and serve with some crusty bread. Top off with some sea salt and extra virgin olive oil.
You can also buy the middle in a tub, be sure to ask for a large tub of stracciatella!

Pecorino al Peperoncino
Soft goats cheese with chilli scattered through? Yes please! This cheese has a lovely creamy texture that has a bit of sweetness to it and leaves you with a nice kick on the pallet. Not hot at all so if you’re only starting to learn to love chilli I highly recommend this cheese. Eat it on its own or I think this would make for a brilliant toastie.
