This was probably the 1 thing I forever looked forward to mum making every Christmas growing up. Cherry ripe, good vanilla ice cream and a good hit of brandy, who could say no!

Ingredients
1L good vanilla ice cream [home made or store purchased]
3 small or 2 large Cherry Ripe bars, chopped/grated
3-4 shots of cherry brandy [can substitute with Amaretto, Maraschino liquor or cherry essence for non alcoholic option]
1/4 cup slithered almonds
1/4 cup coconut
Amarena cherries
Method
Leave the ice cream at room temperature to soften but not melt. Scoop into a large bowl and add the cherry ripe, almonds and coconut. Mix gently and add liquor to taste.
Place back into container [handy to have extra air tight containers on hand as will overfill the original ice cream contents] layering the amarena cherries throughout.
Top with shaved chocolate or more chopped cherry ripe and cherries.
Place into the freezer until ready to serve or has firmed up.
