This might actually be the best chocolate chip cookie recipe ever! Claimed from the year 8 food tech files, it’s too good not to share with the world. If you prefer your cookies chewy – leave them in balls to bake, if you prefer a crunch – flatten them slightly with the back of a spoon.
Makes 20-24 cookies.

Ingredients
3 cups self raising flour, sifted
1 cup compact brown sugar
1 cup caster sugar
250g unsalted butter, softened
2 eggs
2 teaspoons vanilla extract
2 cups chocolate chips
Method
Preheat the oven to 180 degrees.
Chop the softened butter into small pieces, place into a bowl with both sugars and beat with an electric mixer until light in colour and creamy.
Add the eggs and vanilla and combine with the electric mix.
Using a wooden spoon, slowly add the sifted flour, adding the chocolate once all combined.
Roll a heaped tablespoon of dough into a ball and place onto lined trays, remembering that they will spread when cooked!
Bake for 12-15 minutes, or until golden brown.
Allow the biscuits to cool on the trays.
Mix up the chocolate with whatever you desire – dried apricots, frozen raspberries, white chocolate, m&m’s, nuts etc
