Perfect snack, breakfast or side dish! Delicious on their own with some sweet chilli dipping sauce, topped with some smashed avo and a poached egg or get nice and fancy with some Phili cheese and smoked salmon. Made these quite a bit with gluten free flour and they turned out exactly the same!

Ingredients
1 cup SR flour
2 eggs or 3 egg whites
1/3 cup milk of your choice
800g canned corn kernels
1 zucchini grated
Vegetable oil for frying
Method
Mix all of your ingredients together really well in a large bowl.
Heat a pan with a thin layer of oil.
Spoon a good heaped tablespoon on mixture into the pan to create your fritter. Depending on the size of your pan you can fit a few in at once, just be sure they are not touching or you’ll end up with a giant fritter!
Once you see they start to golden on the outer flip them over until golden on the other side.
These will keep in an airtight container in the fridge for a few days.
