Yes a viral trend that I felt the need to experiment with and boy am I glad I did! This is my take on the corn rib sensation, spice it up to your likings. NOTE; 1 cob makes 8 ribs

Ingredients
1 whole corn cob, husks removed
2-3 tablespoons oil [veg/olive]
1 teaspoon paprika
1 teaspoon chicken or vegetable stock powder
Pinch of dry chilli
1/2 teaspoon garlic powder
1 heaped teaspoon all purpose seasoning
Japanese mayo and coriander to serve
Method
Pre heat your oven or air fryer to 180 degrees.
Place the corn in a pot, cover with water and bring to the boil.
Cook for 8-10 minutes until the corn is tender. Allow to cool so you can hold the corn in your hands.
Cut the cob in half and then each half into 4 long quarters.
Place the corn onto a baking try.
In a bowl add all of your spices and enough oil (double the amount of spice) mix well to form a dressing for the corn.
Drizzle over the corn and bake in the oven until the corn starts to curl. Serve while hot!
