One for the adults only, a bit like this Christmas movie! Enjoy this one with a scoop of ice cream like I do or cold down an ice sculpture like they do on the Office Christmas Party movie!
Ingredients
1 cup milk
1 teaspoon cinnamon + additional to serve
1 teaspoon vanilla paste
3 egg yolks
1/4 cup castor sugar
1 teaspoon almond essence (optional)
1/2 cup cream
1/2 baileys or liquor of choice
Method
In a large pot add the milk, cinnamon and vanilla and heat over a low heat DO NOT BOIL!
Grab a bowl, add the yolks and castor sugar and whisk until the mix turns pale yellow and creamy
Very slowly, add the milk mix, whisking together with the egg yolks and sugar.
Add in the almond essence, mix and add mixture back to the pot. Simmer until the mixture covers the back of a spoon when dipped in, again do not boil!
Add mixture back to the bowl and add the cream and alcohol, whisk really well and chill in the fridge, ready to serve.
