Eggs in Sugo

Some leftover Pasta Norma sauce means this breakfast is on the cards! Find the link to my Pasta Norma sauce below, but this can be made with any breakfast goodies. If using some leftover sauce and don’t want to add anything in, skip to step 3!

Ingredients
1 cup napoli [can use passata or bolognese]
2 eggs
Olive oil
1/2 cup extras e.g. diced bacon, spinach, mushrooms, pumpkin
Bread

Method
In a small pan drizzle some olive oil and fry up your extras (leave any leafy vegetables out at this stage)
Cook until they are golden but not quite cooked.
Add the sauce and season with salt, pepper, chilli or spices and allow it to simmer for a minute or two.
Now include your leafy greens as they don’t take long to cook.
Add your eggs to the top, ensure the sauce is only at a simmer.
Once your eggs are cooked, toast up some crunchy bread and enjoy!
