One of those random things you come up with while hangry and cleaning out every item of food in the house!

Ingredients
1 bulb fennel
1 red capsicum
2 carrots
1 head of radiccio
1/4 cup chopped parsley
3 tablespoons mayo or salad cream
2 tablespoons white vinegar
Method
Slice finely the fennel, red capsicum and radicco.
Grate the carrots and chop up the parsley.
Mix all together in a large bowl.
In an old jar, shake up the mayo and vinegar until it is well combined [super quick and easy!] season to taste and shake until you’re happy!
Pour over the veggies and mix well.
