If you know me, you know I LOVE my veggie patch! I get such a rewarding feeling being able to pop out into the garden in the morning and whip up a dish so delicious as this one is

Ingredients
Zucchini
Rocket
Cherry tomatoes
Cucumber
Basil
Rosemary Salt [recipe here]
Sourdough bread
Garlic clove
Olive oil
1/2 lemon
Nasturtium (peppery eatable flower, optional)
Method
Select a bowl that will be your “breakfast salad serve size” and add tomatoes quartered, cucumber sliced and halved, handful of rocket and basil leaves and the juice of half a lemon
In a small pan, add a tablespoon of olive oil and fry your diced zucchini until it is coloured on all sides.
Add to your salad and mix well. Season with salt
Toast the bread and peel and cut in half a garlic clove. Once toasted, rub the bread with the garlic
Top with the salad and a drizzle of olive oil, topped with the nasturtium.
You can pimp this up with a poached egg!
