Italian Brodo

If ever you’re sick, the weather gets cold or you just need a cup of home, brodo is the answer!
This chicken broth brings such a comforting smell to the kitchen, full of so much goodness and leaves you feeling goood!!!! And as always, tastes better the next day & freezer friendly.

Ingredients
1.5kg chicken on bone [whole or pieces]
5 large carrots
1 brown onion
2-3 steams fresh parsley
2-3 sticks celery
Salt

Method
Top and tail carrots, celery and onion, cut in half.
Add everything to a large soup pot and completely cover with water.
Bring to a simmer and cook on a low heat for at least an hour or 2.
Season to taste and drain off the golden liquid.

Serving suggestions;
– Rip up the chicken meat and carrots and serve with small pasta.
– Make some chicken meatballs and cook them in the broth
– Meat or cheese filled tortellini
– Use the broth to make the most indulgent mushroom risotto!
