Mango Granita

I’m pretty sure if there was a poll for the most commonly loved fruit, the mango would be right up there! Inspired by the ever changing granita flavours on the menu at Bam Bar in Taormina, Sicily. Indulge a little and top this with some fresh whipped cream… drool!

Ingredients
Flesh of 3 ripe mangos
1/2 cup castor sugar
Water

Method
In a food processor, blitz up the mango flesh to a smooth consistency.
Place the flesh of the mango into a pot, add sugar and completely cover with water – tip use the container used for the mango to transport the water from the tap to ensure every last drop of mango is used!
Stir to ensure the sugar all dissolves into the liquid and bring to a simmer for 5 minutes.
Place the mixture into a baking tray and place in the freezer for around 3 hours – until is is almost set frozen
Serve and enjoy

Want your granita to last a little longer? Freeze the mixture in ice cube trays with a little lemon or lime juice added to the mix. When you’re ready for a summer treat simply blitz them up!
