Ma’s Chocolate Trifle

One of the last Christmas deserts I shares with this special woman who loveeesss anything chocolate! Make this with love and enjoy it with nothing less than a big warm smile on your face from pure joy. Makes 8-12 depending on serving glasses

Ingredients
– Cake
2 cups self raising flour
1 cup caster sugar
1 cup milk or your choice
1/2 cup vegetable oil
1 egg
2 heaped tablespoons cocoa, sifted
– Toppings
1L cooking/thickened cream
1 teaspoon vanilla essence
290g chocolate melts (large bag)
2-3 chocolate bars of choice e.g. kitkat, toblerone

Method
Pre heat the oven to 180 degrees. Mix all of the cake ingredients in a bowl with a whisk for 5 minutes.
Pour into a greased baking tray and bake for 30 min. Allow to cool completely & slice into 3cm squares.
In a small saucepan, add 2/3 cup cream, bring to a simmer. turn the heat off and add the chocolate. Stir until all the chocolate has melted into the cream – this is now ganache! set aside to cool.
Seperate the remaining cream into 2 bowls. Add the vanilla to one and beat until thickened & set aside.
Beat the other bowl until thick and fold through half of the ganache to make a chocolate mousse.
Layer your glasses – cake, mousse, ganache, cream and top with chopped up chocolate bars or fresh fruit

If you would like a quick edition, you can use chocolate swirl cakes sliced up instead of baking a cake. You can also replace cake for brownies for something richer.
