A recipe inspired by a cake my grandmother used to make. Swirls of 3 different cake batters, how can anyone not be a fan of this cake!

Ingredients
3 cups self raising flour
1 1/2 cups caster sugar + 1 tablespoon
1 1/2 cups milk
1 egg
2 egg whites
3/4 cup vegetable oil
2/3 cup frozen strawberries
1/2 tablespoon cocoa
1 teaspoon vanilla paste or essence
Method
Place the strawberries in a small pan over a low heat until they are completely soft and liquid is released. Blitz with a hand blender and stir through a tablespoon of caster sugar. Place in a mixing bowl and allow to cool.
Pre heat the oven to 180 degrees.
In a large mixing bowl sift the flour and sugar. Mix well.
Add the eggs and whites, milk and oil and beat for 5 minutes until all combined well and thick.
Split the mixture into 3 (one bowl containing the strawberry mix) add vanilla to one and cocoa to the other and mix all bowls well so all flavourings are completely though the batter.
Spray a cake or bread tin with oil well.
Add spoonfuls of each mix to the tin until all of the mixture is used. You can use a skewer to mix through the colours a little more if you wish.
Bake until the top springs back when lightly pressed.
Serve dusted with icing sugar.
