Sweet treats that I used to always ask for with a visit to Victoria Market.
This is my quick treat, usually when I have leftover mixture from making other desserts.

Ingredients
1 packet of soft juicy figs
250g mascarpone
1 teaspoon vanilla extract
Caster sugar
Method
Place the mascarpone into a large bowl. Add the vanilla and 2-3 tablespoons of caster sugar.
Beat well together with an electric mixer, taste and add additional sugar to taste – 1 tablespoon at a time (note too much sugar will melt the cheese) Add mixture to a piping bag with a small opening cut.
Remove the hard top off the fig and cut a slit down one side. Open up the fig and fill with the mascarpone mixture. Eat the same day or store in the fridge for 2-3 days.
