Minestrone Soup

Is there anything better than a hearty bowl of minestrone packed with as many vegetables possible! The best way to clean out the fridge using up anything left over

Ingredients
Carrots
Potatoes
Cherry tomatoes
Green beans, halved
Celery
Zucchini
Broccoli
1 can creamed corn
1 can corn kernels
2-3 tablespoons olive oil
1 tablespoon tomato paste
Salt

Method
In a large pot, add the oil and heat.
Add all of the vegetables and fry while string to ensure it doesn’t stick for 10 minutes. Season
Add both types of corn, tomato paste and cover all of the vegetables with water by refilling the corn cans.
Bring to a simmer and allow to cook until all of the vegetables are tender.

Beef this up with some cooked pasta such as cheese filled tortellini or add a can of beans to the mix.
