A fan favourite! Winter is the best time to make the most of the glorious orange, topped with a soul warming cream cheese frosting for that extra special indulgent touch.
Makes a 20cm cake tin or loaf tin cake

Ingredients: Cake
125g unsalted butter, softened
3/4 cups caster sugar
1 teaspoon vanilla
2 eggs
1 orange, rind and juice
1/2 teaspoon poppy seeds
1 1/2 cups self raising flour
Ingredients: Frosting
250g cream cheese, softened
1/4 cup cream
3-4 teaspoons caster sugar (to taste)
Method
Preheat the oven to 180 degrees.
Cream together the butter, sugar and vanilla using an electric beater, until it is light in colour and fluffy.
Beat in the eggs one at a time, then add the orange juice and rind.
Using a spoon, mix in the poppy seeds and self raising flour until all just combined.
Place the mixture into a lined tin and bake for 20-30minutes, until a skewer removes cleanly.
Allow to cool
Beat together the cream cheese, cream and sugar until it is smooth.
Spread or pipe onto the top of the cooled cake and grate over some additional orange rind.
