Orange, Fennel and Radicchio

The ultimate summer salad in my eyes! It is super fresh while being sweet but bitter, a party for the tastebuds. Simple, really good produce is key to this dish.

Ingredients
1 bulb of fennel
2 oranges
1 head of raddichio
Extra virgin olive oil

Method
Cut off the stalks and base of your fennel then slice in half. Remove the V shaped core and slice into thin strips and place into a bowl.
Slice up your raddichio into 1cm thick pieces [like you would a cos lettuce] and add to the fennel.
Peel the orange ensuing all the pith is removed. Slice in half and then into slices, place into the bowl along with any of the juices off your chopping board.
Give your salad a good mix and cover with a good drizzle of oil.

If you cant get your hands on raddichio, rocket is a good alternate.
