I don’t think I could even count how many pancakes I’ve flipped in my life! Used to make these for 100 hungry workers for breakfast all too often. Dedicating this recipe to my number 1 pancake fans, the Scott family #cobyscakes So happy to share this with you all!

Ingredients
1 3/4 cups milk
1 egg
1 tablespoon vanilla
2 cups self raising flour
1/4 cup caster sugar
1/4 teaspoon bicarbonate soda
Method
In a jug, mix together the milk, egg and vanilla.
In a large bowl, combine the flour, sugar and bicarb and make a well in the middle.
Slowly add the milk mixture to the flour while whisking and continue to whisk until well combined.
Pour mixture required to make the pancake size you like into a greased pan (oil spray or melted butter)
Once bubbles start to appear, flip your pancake using an egg flip and watch them rise up!
Serve with your favourite toppings such as ice cream, maple syrup, banana, chocolate chips etc.
