Pork Sausage and Walnut Pesto

A dish that has a northern origin and a dish that became an obsession along with a negroni or 5 with my friends Jessica. This one is for you, the girl who doesn’t eat meat but will eat this!!!

Ingredients
2 pork sausages
2 tablespoons olive oil
1/2 cup walnuts
1/3 cup romano cheese
300g pasta of choice
Additional olive oil
Black pepper
Salt

Method
Bring your pasta water to a boil, add a good spoon of salt. Add pasta and cook until desired texture. Reserve 1/2 a cup of the pasta water before straining.
In a pan, add the oil and add the mince from the sausages, breaking it up with a fork in the pan, like mince meat. Cook until golden brown.
In a blender add the walnuts and cheese, blitz and add oil until it comes together like a crumbly dough (I once described the texture as when you’re crumbing schnitzels and the egg and crumb get stuck to your fingers!!!)
Add the cooked pasta to the pan with the sausage, cook for a minute on a medium heat. Turn the heat off, add the pesto mixture, mix and gradually add the pasta water – enough to make the sauce glossy. Season with pepper and serve with some crushed walnuts.
