Is there a food that screams summer more than prawns and mangoes? This is a quick easy recipe that will go down an absolute treat. Be sure to purchase some good quality crispy tortilla chips to hold the mixture.

Ingredients
12 cooked king prawns
1 ripe mango
1 ripe avocado
1/2 red onion
1 Lebanese cucumber
1 lime, juiced
Coriander to taste
Salt to taste
Method
First, peel and clean the cooked prawns. Once all of the heads, legs and shell has been removed, chop the prawn meat into 1cm portions and add to a large bowl.
Next, prepare the fruit – slice the cheeks of the mango off, slice and remove from the skin using a spoon. Repeat with the avocado and add all to the bowl of prawn meat. Dice the cucumber (optional to remove seeds) and add into the mixture.
Dice the red onion and coriander finely and add to the bowl. Dress the mixture with lemon juice and salt to taste. Mix really well and allow it to sit for at least 30 minutes before serving with tortilla chips.
Like it spicy? Add finely sliced red chillies to the mix!
