I love Italian sausages but always seem to purchase way too many. Heres how to change the sausage game up when you’re still craving that bowl of pasta.
Serves 4

Ingredients
2 Continental sausages (Medium to Hot)
1/2 Brown onion
1 Garlic clove
2 Ripe tomatoes
400ml tomato passata
Red chilli
Olive oil
Method
Start by dicing the onion, chilli and garlic.
Add some oil to a frypan and heat over a medium flame.
Toss in the onion, chilli and garlic and cook until the onion appears transparent.
Squeeze the filling out of the sausages into the pan, breaking up with a wooden spoon if necessary [should resemble mince meat]
Fry until the meat until just browned.
Roughly dice the tomato and add it to the pan, cooking slightly for 1 – 2 minutes.
Add the passata to the meat and bring to a slow simmer.
Reduce until sauce thickens and serve.
