The absolute ultimate home comfort food pasta sauce. Meat cooked to the point that is delicately melts in your mouth in a rich tomato sauce. Perrrrrfection!

Ingredients
4 cuts of osso buco
2 bottles sugo
1-2 tablespoons tomato paste
4-5 slices of roasted capsicum
1 glass of red wine
1 sprig of fresh oregano [or pinch of dried]
Olive oil
Salt
Method
In a large pot, cover the entire bottom with a layer of oil. Heat and sear the meat on both sides, seasoning as you go. Once browned, add all of the remaining ingredients, filling both sugo bottles up halfway with water and adding them also to the pot. Bring to a simmer and cook for at least 2hr 30min.
Once the sauce has thickened and the meat is falling away from the bone you’re ready to enjoy.
The Italian way is to have the sauce over pasta as your first course and the meat with greens or vegetables as the main. Alternatively, you can add the meat to your pasta, just as delicious and enjoyable.
