The best sauce one can make using up any meat that is in the fridge! You can use any meats on a bone; beef steaks, osso buco, lamb ribs etc and I love to put in Italian sausages! Can also add in home made meatballs, yum! Serve the sauce with some pasta as a starter and the meat as a main with a good hearty salad.

Ingredients
1/3 cup olive oil
Meats of your choice (e.g. 3 osso buco, 3 sausages)
1 bottle tomato passata
1 can whole tomatoes
1 glass red wine
1 heaped teaspoon dry oregano
1/2 teaspoon chilli flakes
1 teaspoon salt
Pinch of pepper
Method
In a large pot, heat the oil and brown all of the meats. Once browned add all of the other ingredients (chilli to taste) and fill up the passata jar half way with water, give it a shake to get all of the sauce and add this also to the pot. Bring this to a simmer and let is cook for at least 1hour and a half – until the meat is falling away from the bone.
