Not quite as fun as the movie but damn enjoyable! I enjoy this served with some crunchy bread or Gerry’s Pitas fried with a little olive oil or topped with a bunch of rocket.

Ingredients
1 zucchini
1 eggplant
1-2 large field mushrooms
1 red capsicum
1 onion
1 tablespoon garlic, minced
2 cans whole peeled tomatoes
Fresh basil
Olive oil
Salt & pepper
Method
Slice all of your vegetables into strips, roughly all about the same size where possible and half and slice the onion.
In a large pan, place some oil and fry up the garlic.
Add the onions, zucchini, capsicum and eggplant and cook until almost soft then add the mushrooms.
As the mushrooms start to colour, add the cans of tomatoes to the pan and allow this to come to a simmer and thicken.
Finish with ripped up basil and season well.
