Roast Chicken

“As the Grinch carved the roast beast” – one of my favourite lines from the movie The Grinch Who Stole Christmas. Is there anything more pleasing than walking into the kitchen with the smell of a roast cooking? Time to crank the oven up

Ingredients
1 whole chicken
Salted butter
1 lemon, washed
2 sprigs of fresh oregano
Extra virgin olive oil
Salt

Method
Preheat the oven to 180 degrees fan forced
Carefully lift up the skin on the top of the chicken
Spread butter under the skin, how much will depend on how big your bird is but you want enough to cover the breasts to keep moist while roasting
Slice a lemon thickly, half will be placed in the bird and a few slices on the wings on the outside
Add some oregano or rosemary in the bird
Drizzle over the olive oil, season and massage into the bird well
Add the bird to a baking tray along with any juices from the bird/oil that remain.
Add any vegetables you wish to roast with the chicken, season them and cover with foil
Roast in the oven until the chicken is golden and cooked through as well as the vegetables soft on the inside!
