Once you make this you’ll never look at a salad the same again. Sweet from the tomatoes with a pepper bitterness from the rocket. This can be made in a pan if you don’t have the time to allow them to slow roast [see note at the bottom] Dedicating this recipe to my sister Tahlia, my number 1 taste tester who lovessss this salad more than I do!!!

Ingredients
1 punnet of cherry tomatoes
1 brown onion (or 2 shallots)
100g rocket
1/4 cup olive oil
Salt & pepper
Method
Pre heat your oven to 180 degrees.
In a deep baking tray, place your olive oil. Halve and slice up your onions and add them to the tray.
Place a slit in each cherry tomato and pop them in with the onions.
Season well, with a little more salt than you normally would use.
There is more oil than you would normally roast with but this will also be your dressing for the salad.
Roast until the onions have caramelised and tomatoes are soft [slightly squishing down the tomatoes halfway through so the seeds and liquid add to the dressing]
Place the washed rocket in a large serving bowl.
While still warm, pour the tomato onion mix over the rocket and serve.
The pan method: place oil, onions and tomatoes into a pan on a medium heat. once the onions and tomatoes start to soften add a quarter cup of water to the pan and reduce down. Season to taste and may need to add a little more oil when serving.
