Sweet and peppery all in one! I could eat this salad almost every day, all year round! This salad also works fantastically with apples, nectarines, peaches and figs when in season

Ingredients
3 cups of rocket
1 bosc pear [brown]
1/4 cup white wine
1 tablespoon honey
1/2 cup shaved parmesan
Method
Halve the pear and remove the core
Slice as thinly as possible
In a wide bowl or plate place half of the washed rocket and pay down half of the pear and repeat
Top with the cheese
Microwave the honey for a few seconds until runny in a bowl. Add the vinegar to the bowl and mix together with a fork until combined
Pour over the salad and serve right away
