Who says no to rocky road ever? Tastes just as good minus the nuts for those with allergies or dislikes, personally I prefer to leave them out to cater for larger crowds. This can also be made with any chocolate, white just brings that little bit of festiveness to the table.
Ingredients
1 bag of pascal marshmallows
1 bag of raspberry lollies
1/2 packet of crushed teddy bear biscuits or scotch fingers
1/2 cup desiccated coconut
2 blocks white cooking chocolate
Christmas decoration confection for decoration
Method
In a large bowl add the marshmallows, chopped in half, raspberries also halved, coconut and crushed biscuits.
Mix all together well.
Lay out a sheet of foil ready to layer the mixture.
Melt the chocolate and add to the dry ingredients, be sure to mix right away until all well combined.
1 large spoonful at a time, start to create a circle of rocky road mixture on the foil. once the circle is formed, go up! Continue to layer this up until all of the mixture is used up.
Sprinkle over any decorations while the chocolate is still wet.
Allow to completely cool before serving or wrapping up as a cute present for a lucky friend or family member.
