Rosemary Toasts

What do you do when you have old bread thats only good for toast? Make rosemary toasts!!! A recipe all the way from my favourite cooking school in Positano. Simple, quick and oh so damn tasty.

Ingredients
Old bread, sliced
Fresh rosemary
Olive oil
Salt

Method
In a large dish, place a good helping of olive oil, think enough to coat every slice of bread you have.
Remove parsley leaves from stalks and roughly chop and add to the oil and season. You want double the olive oil to rosemary quantity wise.
Place the bread into the dish and mix so that every piece is covered in the oil mixture.
Place on a lined baking try and put in the oven at 180 degrees until it starts to golden.

While in Positano we had this served hot with soft gorgonzola smothered on top as well as a serve of truffled mushrooms, drool!
