If ever we took Ma out for lunch or dinner, no matter how many different places you went or time spent looking over a menu, her favourite and go to was always salt and pepper calamari

Ingredients
2 fresh calamari tubes, cleaned
Plain flour
1 egg, beaten
Salt & pepper
Oil for frying
Method
Slice the tubes into desired shape – strips, rings, squares etc
Place some flour into a clean plastic bag, crack in in some pepper and add the calamari.
Shake this about so all of the pieces are well coated.
Dip into the beaten egg then back into the flour to double coat.
Once the oil in a pan is hot, add your calamari trying not to overcrowd the pan. Cook until golden
Season while hot and drain on some paper towel.
