Inspired by the Christmas movie ‘Christmas romance al dente’ based in an Italian restaurant (probably why I like it!) throughout this secret sauce recipe is discussed and here I have the secret ingredients so you don’t lie in bed wondering…

Ingredients
1 cup extra virgin olive oil
2 garlic cloves
1 small onion
1 can whole peeled tomatoes
5 roma tomatoes
1 tsp sugar
1 sprig of rosemary
Small piece of cheese rind (parmesan)
Salt and pepper
Method
In a large pot add the olive oil over a medium heat.
Crush and chop the garlic and onion and add to the pan, cook until the onion becomes translucent.
Add in the fresh tomatoes, diced and cook until soft. Add in the can of tomatoes, refill the can with water and add this to the pot also and season.
Lastly, add the sugar, rosemary and cheese rind and simmer until the mixture has started to reduce.
Remove from the heat, remove the rosemary stalk from the sauce and blend the sauce using a bar mix. Place back on the stove and continue to simmer until the sauce has thickened to your preferred consistency.
If you make a large batch of this sauce it freezes really well so you always have it on hand!
