A recipe inspired by our dearest cousin Matthew! We had never been the kids to grow up eating this but have come to love it as adults, missing out all those years!

Ingredients
500g fresh ricotta, strained
Lemon rind
Salt & pepper
6-10 zucchini flowers, cleaned [see video link]
2 eggs
Plain flour
1 cup cold sparkling water or beer
Oil for frying
Method
In a large bowl mix together the ricotta, salt, pepper and lemon rind to taste. Place mixture into a piping bag and fill the flowers bringing all the petals together at the top.
In another bowl add the eggs,, sparkling water and season. Beat together with a fork until it is all well combined and foamy. Gradually add flour until the batter sticks to your finger.
Coat the flowers in the batter and fry over medium heat until entirely browned.,
Serve with a drizzle of honey or add to the top of your favourite pizza!
