Tahlia’s Cream of Monte Carlo

A pasta passed on by my sister! This became our late night recovery pasta / wet and windy weather comfort pasta / garlic cheese pizza accompanying pasta of choice.
Serves 2

Ingredients
4 large mushrooms
1/2 brown onion
200ml tomato passata
150ml cooking cream
Parmesan cheese
Olive oil

Method
Slice the onion into thin strips / slices and add to a pan with a little oil, over a medium heat.
Slice the mushrooms while the onion cooks.
Fry the onion until it starts to become transparent and add the mushrooms and cook until they start to brown.
Add the tomato passata and cream to the pan, mix well and bring to a simmer.
Mix through parmesan cheese to taste.
