Not the traditional carbonara but this is what we grew up on. I won’t lie, after 5 weeks of travelling Europe, this was the first meal I cooked overseas!
Mum would make it with bacon, unless on my request it would be changed up to mushroom.

Ingredients
Heavy cooking cream
Bacon, diced OR Mushrooms, sliced
Butter [salted]
Parmesan cheese
Method
In a large frypan, add a nob of butter over a medium high heat.
Once bubbling, add in the bacon/mushroom and fry until browned.
To the pan add half a cup of cream per serving.
Bring this to a light simmer and slowly stir in the parmesan to thicken and season the sauce.
[If you want it thicker with less cheese, remove the pan from the heat and slowly add 1 beaten egg]
