Sadly this year my truffle hunting experience with Red Hill Truffles was cancelled due to Covid restrictions. So in order not to miss out I cooked up myself the biggest bowl of treat myself potatoes! Where to get the paste – Italian grocers, specialty stores and markets or contact the truffle farmers directly.

Ingredients
4 large dirty potatotes
3 tablespoons olive oil
1 cup fine grates manchego cheese
1 tablespoon truffle porcini/mushroom paste
1 tablespoon Salt
Method
Pre-heat the oven to 180 degrees.
Peel the potatoes and cut into cubes (1-2cm)
Place into a baking tray, cover with oil and salt and mix well before spreading out evenly in the tray (may need 2 trays depending how big your potatoes are!)
Roast, turning half way until golden brown.
Place the potatoes into a large bowl, including any oil in the tray.
Add the paste and half of the cheese and mix well to ensure all of the potatoes are well coated and the cheese will start to melt slightly.
Place into a serving bowl and top with remaining cheese. Eat while hot!
